  • 1handfullcherry tomatoes
  • Cooking Steps
  • Step 1Preheat the oven to 365 degrees.
  • Step 2Take a ripe avocado and slice it in half. Remove the pit.
  • Step 3Crack a small egg into the hole. There may be a little excess egg white dripping out.
  • Step 4Place the egg filled avocado on a baking pan and insert in oven. Already looks delicious!
  • Step 5Bake for about 15 minutes, or however you like your eggs. I also added some cherry tomatoes onto the baking pan.
  • Step 6Remove from oven and sprinkle some ground pepper and cilantro over the avocado. Dig in with a spoon! The creamy, pudding-like texture of the avocado goes great with a gooey, runny egg. So much nutrient-filled yumminess in one bite! Enjoy!
