First get your hands on:
3 cups baby spinach
1 egg (hard boiled)
1 mango, sliced
1 cup quinoa
2 spoons pine nuts
For the dressing:
1 teaspoon extra virgin olive oil
3 teaspoons balsamic vinegar (try to get good quality stuff!)
1 teaspoon plain greek yogurt (I prefer Fage)
1. In a large bowl, combine the spinach, quinoa, pine nuts, sliced mango and dried cranberries.
2. In a separate bowl, mix together the olive oil, balsamic vinegar and greek yogurt. Make sure there are no remaining clumps.
3. Toss salad together with dressing. Top with hard boiled egg and start your day off right!
